Swedish meat balls,yeah!!!

Swedish meat balls,  a dish that takes me back to my late childhood. We had just arrived to Spain and one of our neighbors, Kristina and Juan, would invite us over for dinner,this was her signature dish. Always loved this dish.

Here is my version of it.  These small meat balls are prepared with some mashed potatoes,minced meat and cranberries.

They are not difficult to make,just a bit time-consuming,but worth every bite full!

Ingredients;

500 g of minced meat.

3 medium potatoes,boiled.

50 g of cranberries.

1/2  a finely chopped onion.

1 egg.

1 Table-spoon of water.

2 Table-spoons of Cream.

3 Table-spoons of butter.

3 Table- spoons of bread crumbs.

salt and pepper to taste.

1)  In a large bowl,mix the bread crumbs with the water. Add the mashed potatoes,the egg and the minced meat. Mix well together, add the onion and half of the cream. Salt an Pepper.  Mix well.

2) With your hands wet, make small meat balls. ( no more than 2 cm in diameter,the size of a tea-spoon)

3) In a frying pan, melt the butter and some oil.  Fry the meat balls untill golden. set aside the meat balls.

4) Remove the excess fat from the frying pan. Add the cream and a little bit of water and pepper.Bring to a boil,reduce heat, add the cranberries and the meat balls . Cook for 15 to 20 minutes.

5) Serve hot with some boiled potatoes and cranberry jam.
