Eggplant and zucchini salad.

This is also a Lebanese dish. It’s a salad with grilled eggplant and raw zucchini, it’s an original mixture that blends well as a side dish with any kind of meat or fish dish.

Preparation Time: 25 Minutes.

Cooking Time: 6 Minutes

Serves 6

Ingredients:

2 Baby Eggplants.

3 Small zucchini

2 Table-spoons of Olive Oil.

1/2 Cup of Chopped Coriander.

1 Table-spoon of Lemon Juice.

1 Table spoon  of Orange Juice.

1/2 Tea- spoon of Pepper.

1) Thinly slice the Baby eggplants.Put them in a sieve and salt them. Set aside and leave for 15 to 20 minutes.

2) Laminate  the zucchini with a potato peeler. Set aside.

3) Rinse the eggplants and dry with some kitchen roll paper. Brush both sides with some olive oil. Place them in an oven tray  and grill for 3 minutes on each side,untill golden. set aside to cool.

4) Mix all the other ingredients in a bowl, add the vegetables and toss to mix. Serve as an entrée or as a side dish.





Grilled Yogurt Chicken Breast.

I Love Chicken. It is one of those meats that has one thousand and one ways to cook it,and it always taste good. This a Lebanese recipe, which is quite light and easy to make.Most of these dishes are marinated with lemon or lime and herbs, such as coriander.

Preparation Time: 10 Minutes.

Cooking Time: 8 Minutes.

Serves 4 People.

Ingredients:

4 Chicken Breasts.

For the Marinade:

1/2  Cup of Yogurt.

1 Tea-spoon of Sweet Paprika.

3 Garlic Cloves.

1 Tea-spoon of Cayenne Pepper.

Salt and Pepper to Taste.

1) To prepare the marinade, mix all the ingredients in a bowl. Place the Chicken breast on a cold grill,  with a little bit of oil. Spread the yogurt mix on top of the chicken, cook for 6 minutes,until golden. turn over and repeat procedure. Serve with some pita bread and  a salad of your choice.
